There is often a glut of bananas in our office, 25 bananas for 5 people is a little excessive and you’re probably thinking, why don’t they order less? Good point, I should speak to the office manager about that…. oh wait, that’s me. I am really good at my job.
Well, this week there were still a gazillion left (yes, the actual amount) and so I stashed a few and decided to invent a banana dish that maybe, just this once, my roomy would like. Alas, it still tastes of banana so he’s not a fan of this recipe but that means THERE’S MORE FOR ME. Honestly, I’m starting to love his distaste for banana flavoured foods. I’d have made a banana bread but my stash was seriously depleted this morning, which means I am going to seriously disappoint my colleague on Monday who I promised a slice to.
Below is my recipe for Banana Madness, because it is just MAD that we have so many bananas in our office. I’ve already eaten the last three slices and I don’t even feel bad about it because they’re so disgustingly healthy and I went to the gym today, because I do that… sometimes.
2 ripe bananas
2 desert spoons (because that’s what was in the drawer) of hazelnut butter
2 desert spoons of cocoa powder
3 desert spoons of light and mild honey
4 desert spoons of brown rice flour
1 level teaspoon of baking powder
As I was in a lazy mood I just threw this all together, it’s so ridiculously simple it’s MAD. Mix the flour and baking powder together, mush the bananas and add them to the flour and then mix in all the other ingredients. Line a baking tray and put in the oven at 180c for 30mins. Voila. Cake. HURRAH. Isn’t is MAD?
I am so in love with meridian nut butters, you can get them in big supermarkets or Holland and Barrett, Revital or any other health food shop you happen upon. Here ends the banana madness.
Note: these are quite hazelnutty so if you’re not the biggest fan just put in half the amount or use another meridian butter.
